So that's what I did, I relaxed on the couch while two pots of soup simmered (and might have indulged in a Law and Order marathon). One vegetarian pot for me and one with chicken tortellini and chicken stock for the man.

Cheesy Tortellini SoupIngredients, Serves 4-6
6 cups of veggie broth (or chicken broth)
2 - 9 ounce packages of refrigerated cheese filled tortellini (or chicken filled)
1 - 14.5 ounce can of diced tomatoes, undrained
4 green onions, chopped
2 minced garlic cloves
1 teaspoon dried basil (or 2 teaspoons fresh chopped)
salt and pepper to taste
1. Bring broth to a boil over medium-high heat.
2. Add the remaining ingredients (except Parmesan cheese), bring back to gentle
boil before reducing heat to simmer for 10 minutes.
3. Top with freshly grated Parmesan cheese and enjoy!
