Easy Cheesy Tortellini Soup

Wednesday, November 17 -

This weather feels like soup. Clear and gorgeous during the day, cool and dark come supper time. Bringing the comfort of early fall, this easy cheesy tortellini soup makes me want to curl up with a blanket.

So that's what I did, I relaxed on the couch while two pots of soup simmered (and might have indulged in a Law and Order marathon). One vegetarian pot for me and one with chicken tortellini and chicken stock for the man.

Special thanks to Jennifer for this recipe.
Such a tasty and easy soup to pass along!

Cheesy Tortellini Soup
Ingredients, Serves 4-6
6 cups of veggie broth (or chicken broth)
2 - 9 ounce packages of refrigerated cheese filled tortellini (or chicken filled)
1 - 14.5 ounce can of diced tomatoes, undrained
   4 green onions, chopped
   2 minced garlic cloves
1 teaspoon dried basil (or 2 teaspoons fresh chopped)
   salt and pepper to taste
   Parmesan cheese

Directions
   1. Bring broth to a boil over medium-high heat.
   2. Add the remaining ingredients (except Parmesan cheese), bring back to gentle
boil before reducing heat to simmer for 10 minutes.
   3. Top with freshly grated Parmesan cheese and enjoy!

Debby-These are the cutest tortellinis, I have not seen this type in our area.
The soup is really easy, and comforting. So much nicer to make your own verses just opening a can of soup.
Great idea!
